Of course eat the rice. Soaking rice releases phytic acid, improving digestibility and making uptake of IP6 possible. I only wish I had learned this fermenting trick decades ago years ago for hair and skin health. I have the same questions. Women in Asia use rice water for skin lightening and women in Europe used to use arsenic for the same purpose.
