No matter where you live you can always grow Kale. I buy a few punnets every three weeks and I have more than I need. My chickens love the kale and all the greens from the garden. I grow grapes, raspberries, blueberries, blackberrys, figs, avocado, mango, red and white mulberries, tomatoes peppers, artichokes, parsley lots of different herbs and much, much more. To hell with the supermarkets and all the addatives and sodium they are killing us with. I say grow your own vegetables and fruits it worth it. My health was poor for over two years I was in agony until I changed my diet and started researching the meds my doctor had me on for years. I fired the dickhead and now I look after my own health. I do love youtube Dr. Axe is very informative as are a few other doctors on you tube. Take care people grow your own food.

I have read numerous places how they are not good for the thyroid and people who have a history of thyroid problems. I have also read that over time goitrogens can cause irreversible damage. I know that cooking these foods can reduce the goitrogens by quite a bit. I am 46 years old and do not have a thyroid condition or take any type of medications for any other condition but there is a family history of hypothyroidism which is a concern. I have refrained from buying produce that comes from the Brassicae family for these reasons but……. I love kale. If you could help shed some light on this from a professional standpoint I would greatly appreciate it.

(and I adore you, as well, Dr. Axe!) My favorite way to get a mega hit in an incredibly delicious way is a fresh kale salad:

– I bunch organic kale, washed, “filleted” into bite size strips
– juice of one lemon
* sprinkle juice over chopped kale to soften while you prep the remaining ingredients
– red bell pepper, chopped
– seeded cucumber, chopped
– red onion to taste, finely chopped or thin slivers
– freshly shredded carrots
– small amount dried cranberries, chopped
– roasted sunflower seeds
(all amounts are dependent on size of salad plus personal preference— but this salad does hold well into the next day & makes great leftovers!)

Dress with a combination of good quality, cold-pressed virgin olive oil mixed with a small amount of red wine vinegar and honey. I do this by “feel”, but quantities might equal something like 1/4 to 1/3 C olive oil, tbsp of vinegar, and teaspoon or two of honey. Of course, adjust to suit the amount of salad you make and/or personal taste. It’s really hard to mess up this combination!

Top off with sea salt & dig in! This is one of our favorite sides, and everyone I’ve ever made it for insists on the recipe.
